Sweet Potato Casserole
serves 8 6 large sweet potatoes 1/4 lb butter softened 1/2 c. light cream 1/2 c. madeira wine 1/2 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. nutmeg 1 tbls freshly grated orange rind chopped pecans
Preheat oven to 375 degrees. Bake sweet potatoes for 40 minutes or until tender. Reset oven to 350 degrees. Mash sweet potatoes adding butter, cream, and Madeira. Add cinnamon, salt, nutmeg, and orange rind and place in a buttered baking dish. Dot with butter and sprinkle with pecans. Bake 25 minutes.
