Pumpkin Muffins
1 stick butter softened 1 c. sugar 1 1/4 c. mashed pumpkin 2 large eggs 1 1/2 c. flour 1 tsp. cinnamon 1/4 tsp. grated nutmeg 2 tsp. baking powder 1 c. milk 1/4 c. chopped walnuts 1/2 c. raisins
Preheat oven 400 degrees. In large bowl blend butter, sugar, pumpkin, and eggs. In another bowl sift together flour, cinnamon, nutmeg, and baking powder. Fold this into pumpkin mixture, alternating with the milk. Stir in walnuts and raisins. Bake for 25 min. (small tins) and 30 - 40 min. (large tins). Makes 12 large or 3 dozen small muffins.
