Mushroom Risotto
Serves 4 2 tbls butter 2 tbls olive oil 1 small onion chopped 1/2 LB small mushrooms cut into quarters 1 clove minced garlic 1/8 tsp. pepper 1 cup orzo (rice shaped pasta) 2 3/4 cups chicken broth 1/4 cup dry white wine 1.2 cup whipping cream 1/2 cup grated Parmesan cheese Chopped Parsley
In a 2 quart pan, melt butter with oil over medium heat. Add onion and mushrooms. Cook, stirring often until onion is soft and liquid is evaporated. Stir in garlic, pepper and rice. Cook until rice looks opaque. Stir in broth and wine and bring to a boil. Simmer uncovered stirring occasionally for 15 minutes. Add cream to rice and cook until most of the liquid has been absorbed. Stir in 1/4 cup of the cheese. Spoon rice into serving bowls and sprinkle with parsley. Offer remaining cheese to add to taste.
