Chevre Gravy for Lamb
1 tbls butter 2/3 c. diced onion 4 tsp. minced garlic 1 tbls white wine vinegar 2 tbls white cooking wine 1/2 c. heavy whipping cream 1/4 c. goat cheese (chevre)
Melt butter in a small saucepan. Add onion and garlic. Cook until soft. Add the wine, cover, and simmer for 10 minutes. Add the vinegar and cream and simmer until the mixture is thick enough to coat a spoon. Fold in chevre right before serving.
