Fun Fiesta Bake
8 1/2 oz. corn bread mix 1 c. shredded cheddar cheese 4 oz. diced green chilies 1 lb. ground beef 1 can of corn 1 chopped onion 1/2 c. salsa
Sauté chopped onion and ground beef in a pan. While that's cooking, prepare corn bread mixture. Add green chilies and cheddar cheese to corn bread batter. When meat is just about cooked, add corn and salsa. In an 8X8 baking dish, add beef mixture first and pour corn bread batter over it. Bake for 30 minutes or until golden brown.
